Momma P's Super Easy Quiche


What you need:
1 pre-baked pie shell
1 can of cream of mushroom soup
6 eggs
Quiche "mix in's"
Milk
salt and pepper to taste

What you do:
In a big mixing bowl beat up your eggs then add your can of soup mix this up very well.
OK, now for your "mix in's" use that soup can to measure.  Stuff it full of all the good things you want in your quiche, you need one can full of goodies, the one pictured had mushrooms, fresh spinach and a little bit of cheddar cheese.
Alright now that you have your mix in's all, well, mixed in it is time for the milk, we are going to use the soup can again to measure.  Now, if you put mostly dry mix in's, like meat, you will need a full can of milk.  If you put in lots of veggies you only need half a can of milk.
Add a bit of salt and pepper to your taste.
Now then, pour all of this into your pre baked pie shell and bake at 350˚ for about an hour.  Check it at 50 minutes and keep an eye on it.  You don't want it to burn!  Let it cool off for 10 to 15 minutes before you cut into it.

Lemon Bars

Ingredients:
2 C flour
1 C powdered sugar
1 C melted butter
2 C sugar
1 t baking powder
1/4 C flour
1/2 C plus 2T lemon juice
4 eggs


Directions
First thing...preheat oven to 350 and grease a 9x13 glass pan.


For the crust, mix together 2 cups of flour, the powdered sugar and your melted butter now press it into the bottom of your greased glass pan bake until golden brown...about 15 minutes or so.


Now for the lemony filling!  Beat up you eggs until they turn a light yellow color.  Now mix in the sugar, baking powder and a 1/4 cup of flour.  After that you can add your lemon juice!  OK...now pour this mixture over the hot crust  and put it back in the oven for 30 minutes.


This is the hardest part...wait for them to cool before you cut them into bars.

Chicken Pot Pie



2 nine inch pie crusts
1 can of cream of chicken
1 rotisserie chicken (I use just the white meat for this and save the dark for something else in the week)
splash of milk
1 small can of peas and carrots drained
Salt, pepper and garlic powder to taste.  I never measure...I put a little in and taste it...if it needs more add it.

1 beaten egg to "paint" the top pie crust with

Bake the bottom crust according to your recipe
Mix everything together and dump in baked pie shell
Place the top pie crust on top cut slits in it bush it with egg.  This makes it all shiny on top
Bake at 350 for about an hour. I cover mine with tin foil for the first 20 minutes or so.
Let cool for about 10 minutes and dig in.


I sometimes add potatoes to mine or cooked rice...and whatever veggies I have leftover in my fridge.

Chicken & Rice

1 can cream of chicken
1 can milk
1 can water
1 can white rice
4 chicken breasts cooked and cubed
Salt, Pepper, Garlic powder to taste

Mix all together in a 9x13 casserole dish and bake at 350 for about 1 hour and 30 minutes.

You can toss in half a can of frozen veggies too if you'd like...it's yummy!

Sweet Potato Fries

1 large sweet potato
salt
pepper
garlic powder
olive oil

Cut up one large sweet potato into fry like shapes and put them into a zip top bag.  Pour just enough olive oil into the bag to coat the fries (about 1/2 tablespoon depending on the moisture content of your sweet potato) and shake.  Next add the salt, pepper and garlic powder to taste to the bag and shake.

To cook you can either bake them at 400 degrees for 15-20 minutes or cook them in a skillet with just a tad bit more olive oil over medium high heat for 10-15 minutes.

I cooked these in a skillet.  Yummy!

Chocolate Chip Cookies

Ingredients:

1 cup whole wheat flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 cup butter, softened
1/4 cup sugar
1/3 cup firmly-packed brown sugar
1 large egg
1 tsp. vanilla extract
1 cup oats
1/2 cup dark chocolate chips


1. Preheat oven to 350 degrees
2. Line a cookie sheet with a silpat mat.
3. Stir together the flour, baking soda and baking powder in a medium bowl.
4. In a large bowl, beat the butter until creamy with an electric mixer. Beat in the sugars. Beat in the egg and vanilla extract.
5. Add the flour mixture until well combined.
6. Stir in the oats, bran flakes and chocolate chips.
7. Drop by teaspoonsful onto prepared cookie sheet approximately 1 inch apart.
8. Bake 12 to 14 minutes.

Cool on wire racks. Serve warm or store in a tightly-covered container for up to three days.

Banana Bread

1/3 cup Natural Applesauce
3/4 cup Brown Sugar
3 Egg Whites
2-3 Bananas
1/3 cup Water
1 2/3 cup Wheat Flour
1tsp Baking Soda
1/4 tsp baking powder
1/4 tsp Salt

Preheat Oven to 350 degrees
Mix applesauce and sugar
Stir in eggs then bananas and water
Stir in dry ingredients
Pour mixture into a loaf pan and bake for 55 to 60 minutes

Mom's Steak Marinade

1/2 cup red wine
1/4 cup oil
1/4 cup soy sauce
1/2 cup teriyaki sauce
1 Tbsp paprika
1/3 cup vinegar
garlic
1 Tbsp dried parsley flakes

Mix, put steak and mixture in a zip-lock bag, & marinate overnight. It's not too sweet and it tenderized the meat. Mom uses it on tri-tip steak from Costco.

Baked Parmesan Chicken

1/2 cup grated Parmesan cheese
1/4 cup dry bread crumbs
2 teaspoons Italian seasoning
1/4 teaspoon garlic salt
1/4 teaspoon ground black pepper
3 tablespoons margarine, melted
4 skinless, boneless chicken breasts

Preheat an oven to 400 degrees. Spray 9x13 inch baking pan with cooking spray.

Combine all dry ingredients. Dip chicken breasts into melted margarine, then coat with bread crumb mixture. Place in prepared pan. Bake in preheated oven until chicken breasts are no longer pink in the center and the juices run clear, about 20 to 25 minutes.

Hot Chocolate



4 1/2 cups milk
1/4 cup unsweetened cocoa
1/4 cup sugar

In a medium saucepan, heat 4 cups of the milk over low heat, being very careful not to let the milk boil. In a small bowl, mix together the cocoa, sugar, and the remaining 1/2 cup milk. Add the cocoa mixture to the warm milk, and continue to warm the cocoa until hot.

Mushroom Stroganoff

2 tablespoons butter
2 pounds mixed mushrooms cut into bite size pieces
1 1/2 cups chicken stock (you can use white wine if you would like)
1 cup sour cream

Melt the butter in large pan cook mushrooms. This might take 2 batches...if so just put cooled mushrooms in a bowl to the side...when the second batch is cooked dump the mushrooms and juice back into the pan.
With pan still hot pour in chicken stock and scrape up all the yummy goodness from the bottom of the pan...boil and reduce just a little bit.
remove pan from heat and stir in the sour cream.
Serve right away over rice or pasta!

Sometimes I add some precooked bite size chicken pieces to change things up a bit.

Honey Oatmeal Bread

1 ¼ cup warm water
2 tablespoons honey
2 tablespoons room temperature butter
1 tsp salt
3 cups of flour
½ cup rolled oats
1 tablespoons brown sugar
1 tsp cinnamon
2 ¼ tsp active dry yeast (or, one package)
½ cup raisins (optional)

Follow the instructions on for your bread machine

Recipe makes 1.5 lb loaf, set to 'basic' with medium crust

Shrimp Quesadillas


Saute ¼ cup each shrimp, onion, corn, green peppers in 1 tablespoon vegetable oil until shrimp is cooked and onions and peepers are soft remove from pan and wipe out with paper towel
Spray pan with PAM butter spray
Place 1 tortilla in pan scatter ½ cup cheese over top and spread in shrimp mixture cover with second tortilla
Cook for 2-3 minutes on each side or until crisp and delicious!
Cut with a pizza cutter and serve with salsa, sour cream and sliced avocado.

Apple Pancakes

1 cup pancake mix
1 cup of milk
1 pealed, cored and grated apple
1 teaspoon vanilla


OK...mix it all together and make pancakes like you would normally! Yummy!

Grandma Janis`s squash rolls

1 cup mashed yellow squash ( butternut or acorn, I like butternut best)
1/2 cup sugar
1/2 cup ( marg. or crisco )
1 teasp. salt
1 cup hot milk ( not too hot or you will kill the yeast )
1/2 cup warm water
1 pkg. yeast
5 cups flour

Mix first 5 ingredients.
Add yeast that has been disloved in the warm water.
Work in the flour and knead.
Let rise till double in bulk.
Knead again and form into rolls.
Let rise again, and bake at 400 degrees for 20 min.
These freeze well and will keep for up to 6 months.

Crock Pot Meatballs

1 bag of frozen fully cooked meatballs
1 jar of spaghettii sauce

Dump in Crock Pot cook for low for 6-8 hours or High for 4 hours.

These are super good on rolls for sandwiches or over pasta...or heck...just on their own!

Slow Cooker BBQ Chicken

3 or 4 Chicken Breast
1/2 Bottle of BBQ Sauce
1 Chopped Onion
1 tablespoon pre-chopped garlic
salt and pepper to taste

Put all of the above ingredients into the crock pot cover with water and cook on low for 8 hours or high for 4.

Remove chicken from crock pot and shred with a fork.

I like to eat it on a bun with a slice of cheese.
